Casa Noble Crystal (Blanco) Tasting Notes

What a great bouquet! The nose on the blanco ("Crystal") is nicely balanced between vegetal and sweet. After allowing it to breathe it blooms with notes of ripe mango, floral agave, and a subtle chocolate-like scent. Casa Noble is triple-distilled, and therefore very soft upon entry. The agave upstages a mild peppery zip that is not at all astringent. It nibbles but doesn’t bite, allowing an appreciation of this complex, fresh-tasting blanco that’s packed with flavor: agave, citrus, and even a little butter and asparagus. It approaches bitterness but veers toward fruity and floral as it finishes, leaving a baked agave aftertaste.
     The Good: Well-balanced nose and body. This is one of the best triple-distilled blancos - it doesn’t smooth out the tequila so much that it completely puts out the fire, nor does it sacrifice flavor.
     The Not-so-good: Nothing, a solid A.

Casa Noble Reposado Tasting Notes

The reposado looks like liquid gold. The smell of rich chocolate competes with the sweetness of baked agave, giving way to a subtle scent of creamy caramel. The smell is a little deceiving, as this still-lively tequila confronts the tongue with an earthy woodiness and herbal agave flavor that guides you toward the complimenting flavors from the barrels, which offers everything from oak, tropical fruit, cocoa, caramel, and just a hint of smoke. There is a nice, warm ending that’s reminiscent of the wonderful bouquet, with lingering flavors of agave, chocolate, and caramel. This tequila is wonderfully consistent and balanced, and an absolute pleasure to sip.
       The Good: Wonderfully rich flavors from the barrel that are in harmony with the flavors of the tequila.
       The Not-so-good: First sip can be a bit “woody” and confrontational.

Tequila Examiner Grade, Casa Noble Reposado: Highly Recommended (A-)

Casa Noble Añejo and Cocktail Mixing Notes

I recall from my tasting at the distillery that Casa Noble makes a superb añejo, however, the samples sent to me for the purposes of writing these tasting notes included two 50ml bottles of the reposado and no añejo, so there will be no waxing poetic about the añejo – on to the cocktails!
The Crystal makes a wonderful, fresh-tasting margarita with strong complimentary flavors from the tequila. Try any of the mouthwatering Casa Noble cocktail recipes that are over at the Mixoloseum (with daring ingredients like Chartreuse, bitters, and ginger) and expect the tequila to hold its own – about 1.5 to 2 ounces of Crystal in the average-sized cocktail is enough to accent the boldest of ingredients with the flavor of Casa Noble.

Several years ago before it was so hip, bartenders like Alberta Straub took the fresh-juice cocktail movement a notch higher by incorporating organic fruit, vegetables and syrups into creative drinks. Organic spirits followed the return-to-the-earth movements. Now you can even find the world's first certified organic bar in the New York restaurant Gustorganics.

Buying organic spirits often means a
premium price for the feel-goods like packaging made from renewable resources and grains and fruit sourced from small farms with low yields.

Some claim that organic spirits are healthier and better tasting without the taint of pesticides and herbicides. Science argues that alcohol evaporates at lower temperatures than chemical residues that might be contained in non-organic liquid, so these residues are left behind anyway. Handcrafted products may or may not taste better. Overindulge even in an earth-friendly spirit, and your head will still pound no matter how good you feel supporting sustainable agriculture.

The USDA
National Organic Program (NOP) Congress passed the Organic Foods Production Act (OFPA) in 1990. The USDA regulations define what is allowable on an organic label based on ingredients and production process. The USDA organic seal signifies that the product is at least 95 percent organic. With the bureaucracy, costs and trendiness of certification, some rebels snub the organic sticker but still use organic ingredients and methods.

Tequila saw its first certified organic product with the introduction of
4 Copas. Now the elegantly-designed bottles of Casa Noble as well as 3 Amigos can claim certified organic status, as well. Production doesn't get much more natural than Del Maguey mezcals which now have organic certification to prove it.

As a lover of fine mexican cuisine, pool parties, and dive bars, I am always on the hunt for a better tequila. My journey with the G-Lodge recently led me to a unique opportunity in which I, along with the lodge crew, was able to sample and critique one of Jalisco’s finest brands. Casa Noble tequila boasts a rustic palette of flavors suitable for any occassion. In my opinion, you could see their iconic silver tops being popped off anywhere from El Presidente’s daughter’s wedding, to a college mansion party. Last week, thanks to fate itself, we found ourselves atop West Hollywood’s “Mexico Restaurante y Barra” in the middle of an exclusive G-Lodge x Casa Noble tasting. Good thing R. Fontana was there to capture the moment…





Crystal (Not Aged)
Complexity –
With a simple citrus flavor and legs that last for about 7 seconds, this “silver” tequila stands out from the rest.
Smoothness - 
The crystal has a slight burn, but it is definitely a good burn.
Aftertaste - 
Slightly smokey aftertaste with a good coat on the throat.
Packaging - 
The clear, heavy bottle lends itself to an iconic image and a classic appeal.
Aroma –  
Everyone agrees that the citrusy aroma is enticing, but could be more powerful.
 
Reposado (Aged 364 Days)
        Complexity
With slightly heavier legs, the reposado boasts a smooth hint of vanilla.
Smoothness
Especially for a reposado, this tequila is surprisingly smooth.
             Aftertaste -
While the aftertaste doesn’t last very long, the intensity of pepper and spices is invigorating.
  Packaging
The unique amber color of this bottle was especially noticeable in the light. Beautiful seal.
   Aroma - 
The scent of the reposado is floral at times with a hint of citrus.
 
Añejo (Aged 2+ Years)
                     Complexity -
The añejo features thinner legs and a robust flavor.
Smoothness
Not as smooth as the others, but delicious nonetheless.
          ;Aftertaste
Spicy, thick, full-bodied, and with a hint of caramel. Very complex.
                       Packaging
With a unique, dark-purple bottle, there is definitely a “cool factor”.
     Aroma - 
The scent of the añejo is not for the weak. Hints of smoke and pepper are noticeable.

With an incredible array of sweet and spicy flavors coupled with a smooth and exotic scent, it is no surprise that the Casa Noble legacy has been in the making since the mid-1700s. Their own 3000-acre agave fields rest in the hills of Tequila, Jalisco, mere miles away from the distilary in which this gentleman’s drink is produced. I was recently given advice from a mentor to “play to my strengths”. I think it’s pretty clear that  the owners of Casa Noble have been doing that since they began over 300 years ago…

Over the past few weeks we’ve been spending a lot of time with tequila and mezcal: sipping it, doing extensive tasting notes and mixing it up. All this lead to our monster piece with over 20 mezcal and tequila reviews and our Top 5 List of Mezcal and Tequila.
While we love sipping good tequila and mezcal there are 3 mind blowing cocktails which we feel shows off the very best of agave based drinks.
The first drink is the Margarita. Perhaps one of the most overdone drinks, the classic margarita isn’t something that looks like a slurpee from 7-11 or even really needs Cointreau to spruce it up. A perfect margarita is a beautiful expression of the agave spirit and how well it connects with citrus.
Our absolute favorite maragrita recepie is perhaps the most straight forward and it comes’ from Tommy’s Margarita Bar in San Francisco:

Tommy’s Margarita
2 oz  Blanco Tequila (Casa Noble Blanco Recommended)
1 oz lime juice (must be fresh squeezed)
1 oz agave syrup (diluted 1:1 nector/water)

While Cinco de Mayo celebrates a time in history when the Mexicans momentarily defeated the French on their march toward Mexico City from Veracruz, we can all celebrate another traditional Mexican beverage. Tequila, which is naturally fermented and triple distilled by Casa Noble, is born among the legendary mature blue agave plants.

A real hacienda can be traced as far back as the 1700’s where “vino mezcal” had begun its journey to being entrenched as the drink of celebration among the passions of the Mexican way of life. Since then, it has since spread across the world from the cantinas of Mexico City. TDN Casa Noble Tequila: The Tlaquepaque Cocktail

I managed to make it to another Thursday Drink Night last week, in which cocktail nerds, a few bartenders and occasionally an honored guest such as a distiller converge in The Mixoloseum Bar chat room, discuss that week’s sponsoring spirit or theme, geek out and come up with some new drinks.

Our sponsor last week was Casa Noble Tequila, and we were lucky enough to have José “Pepe” Hermosillo, a founding partner of the distillery, joining us from Jalisco, Mexico (unfortunately, by the time I got home he was just logging off). The samples that were sent out were their blanco tequila, which they call “Crystal” — 100% agave, slow-cooked and only the hearts and cores are used in fermentation. I have yet to try any of their other varieties but I loved the Crystal. It had a rich, profound agave flavor, nicely vegetal and spicy, some black pepper and citrus rind. I don’t normally sip blanco tequila but I enjoyed sipping this one, and it occurs to me that this would make a pretty tasty Improved Tequila Cocktail (not that Jerry Thomas had tequila in the 1860s), which I’ll try next. (It’s also got a pretty bottle, so hush.)

I wanted to play up the vegetal and spice qualities in my original cocktail for the evening, and I was inspired by a terrific drink that Bryan Summers of the Library Bar at the Roosevelt Hotel in Hollywood made for me back when he was at Bar Centro at The Bazaar by José Andres a year and a while ago called the Archangel. That was gin and Aperol with a little cucumber, which was my launching point. I thought cucumber and Aperol would work really well with this tequila.

The Aperol’s low alcohol content smooths out the spirit’s edges and gives a nice, gentle bitterness, and the orange flavor complements the tequila’s citrus notes. I wanted to bring that up a little bit more with the Créole Shrubb without making it too sweet. I also wanted to bump up the bitterness a tiny bit, so I used Cynar, hoping that the artichoke enzyme cynarin would help make the sweet elements taste a bit sweeter without adding more liqueur. It seemed to work pretty well, although it took a bit of tinkering. One barspoon wasn’t enough, two were too many and 1/4 ounce — a barspoon and a half — was just right. The cucumber adds another vegetal element, again gentle, and helps tie everything else together and make them play nicely. I’m really happy with this one, and I think it’d be a good aperitivo for a Mexican meal.

The name comes from a town in Jalisco where my old friend Luie was born. It was near Guadalajara, but the town’s own growth and Guadalajara’s massive growth caused it to be swallowed up by the greater Guadalajara metro area, and it’s now considered a neighborhood of Guadalajara. It’s from the Nahuatl language, sort of pronounced “tlah-kay-PAH-kay,” and it’s really fun to say. Even more fun to drink.



TLAQUEPAQUE

2 ounces Casa Noble Crystal tequila, or other blanco tequila
1 ounce Aperol
1/4 ounce Clément Créole Shrubb
1/4 ounce Cynar
2 slices cucumber, about 1/4″ thick, for muddling
2 thin slices cucumber for garnish

Muddle the cucumber slices in the spirits, add ice and shake 10-12 seconds. Double-strain into a chilled cocktail glass, and garnish with two thin cucumber slices

Daisy Martinez, star of the Food Network's "Viva Daisy!," hits Carnivale tonight for a book signing for her her new cookbook "Daisy: Morning, Noon, And Night."

Chef Mark Mendez is offer appetizer specials from the cookbook including blue cheese and caramelized onion Empanadas (Leo Suarez just boasted that they were Chicago's next big thing), Asopao (Puerto Rican chicken and Pigeon pea soup) and the special Daisytini cocktail (Casa Noble tequila, agave nectar, passion fruit, lime, and mint).

As a New Yorker of Puerto Rican descent, Martinez picked up her culinary skills at the feet of her mother and grandmother. She's a late bloomer, attending the French Culinary Institute at the age of 40 and landing a PBS show after a stint as a private chef. Her Food Network show, produced by Rachel Ray's production company, is in its second season.
